Steve and Stacie Ballard and son Travis Ballard operate Ballard Cheese, LLC in Gooding, Idaho. Ballard Family Dairy and Cheese is a farmstead cheese operation — cheese that is handmade in small quantities that are produced on the farm using only milk from the herd located on that farm. Currently, the company produces fresh cheese curds and Cheddars (Idaho White Cheddar, Idaho Pepper Cheddar , Truffle salt cheddar ,Vintage aged Cheddar), Danish Pearl (Gouda) , Jersey Dream (feta), Holy Cow Baby Swiss, and Parmarono (Parmesan/Romano)
